鮭は実は白 身魚。
えさにしてるオ キアミなどが赤い色をしてるため赤身に見えるだけ。
実際、河を遡上し始めた鮭は身がどんどん白っぽくなっていく。
また、えさになるオキアミ類は北の海のほうが多いので、南下していくに従っても色が落ちる。

ちなみに色が落ちるのとほぼ平行して味の方も落ちていく。
うまい鮭を食いたかったら出来るだけ色の鮮やかなのがいいよ。
